Ingredients:
For the Lemon Oat Milk:
- 3 tablespoons oats
- 3 tablespoons cashews
- Half of a lemon
- 300g lemon oat milk (freshly made with Milky Plant)
- 4g agar agar powder
- 1/4 cup caster sugar
- 1/4 cup lemon juice
- Lemon peels
- Pinch of turmeric powder for color (*optional)
Instructions:
For the Lemon Oat Milk:
- Add ingredients to the blending compartment. Make sure not to pass the Max line.
- Fill up the water tank with clean water.
- Press the start button and wait a couple of minutes for Milky Plant to work its magic.
For the Lemon Pudding:
- In a saucepan, combine the oats, cashews, and juice of half a lemon along with 300g of lemon oat milk.
- Add agar agar powder, caster sugar, lemon juice, lemon peels, and a pinch of turmeric powder (if using) to the saucepan.
- Cook the mixture over medium heat, whisking constantly until all ingredients are dissolved.
- Allow the mixture to simmer for 1 minute, then remove from heat.
- Pour the mixture into food molds or ramekins.
- Refrigerate until set, usually for a few hours.
- Once set, serve chilled with your favorite yogurt.
