Ingredients:
- 110g vegan butter
- 60g caster sugar
- 40g brown sugar
- 1/2 tsp vanilla
- 150g plain flour
- 1/2 tsp baking powder
- Coconut pulp (after processed by Milky Plant)
- 30g desiccated coconut
- 60g pecans, roughly broken
Instructions:
- Preheat the oven to 180C/350F. Line two baking trays with parchment paper and set aside.
- Beat the vegan butter and sugars together until pale and fluffy.
- Add in the vanilla, flour, and baking powder; mix to combine.
- Tip in the leftover coconut pulp from making the milk and mix through.
- Into the bowl, add the desiccated coconut and pecans; mix until well distributed.
- Divide the mixture into evenly sized balls.
- Place on the prepared baking tray and bake for 10-12 minutes until baked through and lightly golden at the edges.
- Leave to cool for a few minutes on the tray before transferring to a wire rack to cool completely.
